Texas Caviar-Chip Dip
1 can corn, drained and rinced
1 can black eye peas, drained and rinced
3 small firm avacados, diced
4-6 roma tomatos, diced
1 pkg italian dressing mix, prepared
Make dressing according to packaging directions using olive oil. Stir all ingredients together. Serve with tortilla chips. Refrigerate overnight for best taste.
This is really good, but I am going to try to substitute black beans for the black eye peas next time. I don't care for peas.
